Absolutely nothing. Overproducing is the current balance. There is simply not enough demand for your product.
This will change as the game develops and we obtain access to more customers, more drugs, and more areas.
EXP is awarded as soon as you obtain it from deals, dealers dealing, running from the cops and gaining new customers. The end day screen is just showing you a recap of any EXP earned during that session.
You can confirm this by getting your EXP close to the next level up, then doing a few deals to finish off that level. You can now purchase whatever was locked before you sleep for the day.
I had this same problem when i started, all i can tell you to do is power level till you get the brick press, it solves most overproduction problems

It's a loading inconsistency... The moment you load the game counts it as a "fresh" day so it doesn't update any xp you ALREADY got from before the load... but you get the exp upon a sale. The end of the day is just more of a summary of what happened during the day but because loading counts as a "fresh day" you don't have a summary.... you DID get the exp though
