Mixing is more for if you want to spread effects or to recruit someone. Otherwise you can sell whatever you want. I am selling full stacks of weed to customers at this point for their max spending budget but i run out of weed quick before I sell to every possible person thats available on the whole map after 4am.
You will see when you go to sell expensive product its not easy at first because they cant afford it.
Mixing anything over 8 times is actively counterproductive and makes reasonable automation impossible.
The recipes for the current min-maxed drugs are in the a guide here, but I would suggest you avoid optimizing the fun out of the game on a first playthrough. Early Access and all.
Once you make a single good mixture of any one drug, there isn't an real reason to make anything else.
Higher Quality means higher chance to sell or convince new customers, so try to make the most valuable product you can.
Dealers' 20% cuts are pretty steep when given high value product, but if you can make substantial quantities of your best goods, it'll be more resource efficient to do it. Customers will only buy on or two of them. If you only have middle-grade product, make them sell it in bulk and hand craft the really addictive and valuable stuff.
Also: Dealers can redistribute jars and bricks into bags if they have enough empty slots in their inventory. Do not overstock them with jars or they simply can't sell anything worth more than 100 bucks.
*While the actual return rate on Cocaine is much higher than the actual return rate on Weed, there's an argument that selling bulk, Heavenly quality OG Kush can provide more immediate profits than the most valuable Cocaine mix doled out one by one. If you find yourself making too much base level weed or meth or coke, it might be more valuable to sell that in bulk instead of hoarding it to mix and distribute your best product. Addiction level matters, though, as maximally addicted customer will not only have a higher price threshold on sales, but will sometimes seek you out for whatever you are selling for much more than usual asking rate.
