I have the exact same bug! My janitor is just gone, even after a couple days and relaunches. They aren't occupying the same spot as another NPC, and it's starting the become a real mess in the barn.
I've got 4 out of 10 workers missing from my barn. I've been exploring to figure out how to fix it but nothing yet. I'll keep researching and let you guys know if I find something.
Okay, I used the setjumpforce command and jumped on top of the cliffs behind the barn, they were all up there, stuck. I released them all and rehired them the next night.
so i found mine stuck up on a ridge to the north, my theory is he got launched there when a delivery van spawned in on top of him

I fixed this by opening up the missing NPCs folder in my save folder and changing their position to near one of the other NPCs. Still no idea what caused it, but it being a delivery truck issue would make sense, I make orders at the barn at 4 A.M. all the time.

Yall can try this mod. It gives the ability to increase worker caps, and maybe even fire employees remotely if you know which one is glitched out. I had 3 employees disappear from the Barn. Developer needs to relocate the resting locations of workers to not stand on loading zones, b/c the delivery van will catapult them miles away.

Each NPC has a file called NPC you can open in notepad, located in C:\Users\[yourname]\AppData\LocalLow\TVGS\Schedule I\Saves\[IDNumber]\SaveGame_[#]\Properties\[PropertyName]\Employees\[EmployeeName]\NPC.Json with their position set in X, Y, Z coordinates. Check a known good NPCs file for their position and just copy it over to the problem NPCs file.

I'm gonna go insane. The guy that I hired is literally not in the folders, but he's still taking up a bed and I can't fire him. Everyone's name is there but his

There is no appdata path after I select my user profile. appdata is not there and when I use the run command %appdata% it doesn't find a path either.

By default, AppData is a hidden folder. This seems a competent guide on how to reveal those https://www.howtogeek.com/446/show-hidden-files-and-folders-in-windows/
