How many pots should I assign to a drying rack?

I currently have 2 pots' destination to 1 drying rack. Should I be assigning more pots to one rack? Or this the right amount?

I currently have 12 pots, so 2 pots per 1 rack.

note: I'm not using any additives on my plants so they're all yielding the normal 8.

There is no definite answer to that since there are several factors going into this.
If you grow weed in a grow tent then the normal is indeed 8. However if you use a pot+lamp combo "normal" is 12.
It then depends on what pots you use and what lights as those influence grow speed. Do you actually plant yourself or do you use workers? With workers limited to a max of 10 it is more a question on how to asign them efficiently as you need an additional botanist to unload drying racks.

However, at the end of the day it depends on how much you sell yourself every day because dealers don't care about the quality. So if you have more weed than you can dry just give it to your dealers and sell the dried high quality stuff yourself.
