You can also break bricks back down by clicking the arrow on a packing station and it will unpack it if you put it in the out put. works for bags and jars too.

Nope, Suburbia and I am assuming Uptown too since not unlocked them yet. Everyone else is 0% that I come across. Till I unlocked Suburbia people were all 0% chance and when I unlocked I tried them and sold some to a few different people.
