As others have said, you need space for them to break it down
A lot of people would, both in-game and IRL.
I sell exclusively jars given storage space is a pain in this game. For personal sales, I counter offer everything and offer 5x of a product. Dealers, as stated above, will break down jars into baggies as needed if they have space.
I buy pounds at a time.
In game? My dealers are only given Jars and they sell all the time. I am on the regular, picking up between 3,500 - 4,000 from them and have to constantly restock them with more jars.
People buy ounces, it's not that uncommon.
