2) The creators even didnt gave soldiers sandbags, but if you will research history of ww1, you will know that ALL soldiers during ww1 got small other big shovels specially for digging new trenches after charge. You just can ask google
3) Trenches will give this game more tactical elements, it will be really big step from Men of War tactic without trenches.
Trenches would be nice, if only you could destroy them. Otherwise, maps would just turn into trench system withint 15 minutes. :P And as we all know, stalemate is neither fun nor good for gameplay.
If you want buildable trenches, try the TGW 1918 mod for CoH (a shameless plug from a dev).

Well, the mod is obviously a lot more realistic than vanilla CoH - but there's only so much we can do. ;)
Most of the maps do have trenches in them - just that you can't build them yourself. They're pretty good by my standards.
Shells and explosives can make craters, so why shouldn't they be able to destroy trenches?
I say with all my heart that this game MUST have trenches IMO :)
