EMN might be included later, but that's not confirmed.
Not every cards can be on the same power level as others. Nor should they.
Like I said, they said they'd have all the cards in Standard; KLD till present.
They may add older cards (ie. Origins - EMN), but there's no guarantees.
Attack them. Deal noncombat damage to them. Destroy them. Exile them. Arrest them. Imprison them. etc. There are plenty of options.
2. No, only those still in current standard format
3. There is lots of cards that can help you kill PW (I think I killed 6 in a raw once in a game, that was fun), use your brain to find which ones and stuff your deck with them.
I just want to point this out again, since I think you and others are going to be very disappointed if/when you get in the Arena beta...
All they have said so far is that they intend to use only Standard format in Arena, at least for now, and that the beta is starting with JUST Ixalan. In the future they have said they will add new sets as they come out, I haven't seen anything at all about implementing older sets. Maybe? But it's pretty clear their intent is to follow Duels example of starting with a single set and build to Standard, only this time it seems they intend to actually limit it to Standard.
What happens when they have to rotate out Ixalan? They haven't said anything there either beyond that there will be something players can do with obsolete cards, most likely a crafting/recycling system ala Hearthstone... Possibly they'll implement Modern format and eventually phase out MtGO, but since they've specifically said no to card trading I find that unlikely since the buy-in costs for larger card count formats would rapidly become insane.

Did you pay attention to the announcement video? In the first game, the guy played Samut, the Tested. You know... the Planeswalker from HOUR OF DEVASTATION.
Not if they include old sets like you're hoping.
From the WotC FAQ at https://magic.wizards.com/en/mtgarena/faq:
I suppose if you're an extreme optimist you can choose to read that as "...as well as the rest of Standard". But considering their goal for launch (probably meaning hard launch not soft launch/open beta) is full Standard, I'd say it's pretty darned unlikely they'll have it during the closed beta.
Good god, no, once I found out there was no AI and no 2HG there was no way in heck I was going to watch an hour long infomercial/hype train for a game I wasn't going to play in the forseeable future. Was there a significant number of non-Ixalan cards? Because otherwise I'd just chalk that up to them not wanting to spoil the Ixalan planewalkers at that point.
You're welcome to expect full Standard in the closed beta if you want.
You're making assumptions about me. Don't do that.
The majority of the cards shown were from Ixalan, because the two people got to make their own deck. What expansions the other cards in their deck were from, which we didn't get to see, is anyone's guess.
But, to state that they were only from Ixalan is factually wrong.
So far, as zoiks rightly underlined, the only thing we know about cards available in the closed beta is that there will be the 279 cards from Ixalan, nothng else.
I got my information from this thread on Reddit: https://www.reddit.com/r/MagicArena/comments/72uvoz/mtg_arena_qa_live_stream_is_up_and_running_on/
And you can still watch the streams on Twitch here:

A few highlights...
dude delete this before someone burns you..
It says "up to one target creature gets -2/-1 until your next turn". So you either target one creature or none at all.
I'm desappointed that the beta won't start before November, and that proves even more how much the abandon of Duels was decided too early as people are currently left in the void and many will move to other concurrent games.
