So things that definitely influence score:
1. Composition, composition, composition. What it is you're taking a photo of, this includes facial expressions, objects in the hand like a champagne glass, pose, and setting.
2. Zoom distance. The same shot at different zoom distances had score variations but I can't tell if specific distances are desired, it's not consistent. I've had bad luck with full body shots but other people seem to have better luck.
3. Camera Rotation Angle (that is moving around the models), generally I found that any profile angle shots kinda suck for score.
Things that don't
1. Point Lights, Frames, Stickers, and Filters
2. Exposure, Focus
3. Camera Tilt Angle, Camera Y-Axis Angle
4. Oddly enough, framing the subject in the center vs off center hasn't influenced it as long as some of the subject is in the center. IE if her face is off center and your center is on her chest, it won't affect score any vs a photo centered on her face, at least in my experiences, but some extremes like having her head be all the way in the top while you're focused zoomed in on her boobs might affect it.

I also thought so, but I think is just a matter of getting a grasp of what the game thinks is a good photo.
I just finished my first playthrough (a little late I know) and even if my photo scores
sucked at the first half I managed to (kind of) consistently land 2 and 3 stars by the latter
chapters.
Here are my two cents on the topic:
-This should go without saying but trying to meet the chapter's photo requirements
gives your shots a better chance of getting a good grade.
-Capturing 2 or more Venuses together tends to grant better grades, even better
if they're interacting between them (seeing at each other,
speaking, playing etc.)
Chapter 11 for example has a lot of chances for really good score pictures because
of this.
-Try and capture the Venuses showing different emotions, expressions and poses, just
taking pictures of them standing idle will only take you so far. The stronger their display
of emotion, the better
-Time stop hourglass is of massive help, so if you did not purchase the deluxe edition
(which unlock it from the start) go and complete the game one time in order to unlock it.
-I did not play a lot with photo settings such as focus, filters, etc. Mostly because
I don't know the first thing about them, but given that I eventually got better and better grades without them I don't think they matter that much.

As one can see, these are not great shots or anything, but they fulfill what the game wants to see in a good grade photo (Chapter's Focus Points, Venuses interacting, Venuses posing, Venuses displaying strong emotions).

Wow great tips !! thank. i did tried to play with the photo setting e.g focus / exposure etc but still can't pinpoint how to work to get high rating photo. I think you got e impt point is the strong expression / pose.

1. Aim your center crosshair at the girl's collarbone/chest, and zoom in/out first. If you get a 2 star in the score star in the top left, try to adjust the photo angle and rotate the camera around (up/down and left/right).
2. Use the "superzoom" lens if you can (change lens function). You will switch to a wider zoom, aim the center crosshair at the girl's collarbone/chest and zoom about 80-90%, usually the score star will go to 3-star easily. Just rotate the camera/ move the camera slightly if you still don't get 3 star.
3. Try doing all above when the girls are moving / doing poses / has non-neutral face expressions (smiling, embarrassed, etc)
