How to stage select?

It's always set to random, yet I recall there being a time where you could select your stage in the PS2 version...

Is there something I'm missing to make it not be random?

While on the character selection screen for any VS mode, move your cursor over a character's portrait and press R2 to select that character's stage. Pressing R2 over the random character button will select EX I-No's stage.

Can you select their theme too somehow?

The song is usually determined by the character selected with the R2 button. But if both players selected the same character, the song will always be the "Same Character" theme.
