Regarding realism, I think you'll find that in real life good snooker players (and me :-) ) will use the the same stance and hence head position on the cue for the majority of shots regardless of distance.
Typically for shots near the cushion the head position and stance will be off the edge of the table, meaning for shots further in table the head can be above the table still at the same distance along the cue and from the cue ball.
If this is not achievable a player will probably either stretch their stance (an exception) or use the rest, but both are only as a last resort and relatively rare because it's something you play to avoid having to do.
Consistency and repeatability is key and resetting to my personal default would be the equivalent of taking my normal stance.
If you were going for more realism you could have it so the view point is limited by the cue ball's position on the table, so if you aim in such a way that you'd need the rest (or god forbid the long rest :-) ) in real life the view is zoomed out accordingly and you can't zoom in as close as normal.
...I actually quite like that idea but maybe it's outside the remit of this thread :-)
Imagine rotating 360° and for most of the rotation the view would stay as you set it but as the line of the shot moves across the length of the table the camera smoothly zooms out keeping a realistic view distance, such that your imaginary head can't be in impossible positions. Then as it continues round the camera automatically zooms back towards the normal zoom level. Like a teardrop shaped camera path around the cue ball.
It would have to be done very carefully not to be annoying and should be rather generous as most typical shots can be played from a normal position even if it is a stretch. I think it would be a nice simple addition to the level of realism in snooker especially though.
That said, let's not run before we can walk :-)
As mentioned above, as someone who values a consistent view point being able to reset it would be a big improvement for me.
Also, and I know I keep banging on about it, but for the same reason this bug: http://steamcommunity.com/app/314000/discussions/2/458604254418456889/ remains probably my biggest issue with the game (this suggestion would actually act as a partial work around).
