I'm not sure if you can do it from in game menu.
Try to go to AGOD forum, adn there I guess there might me some user/dev made modifications for resolution.

Hi

You can change screen resolution, using the AGESettings.exe utility that is located in the game instalation root menu (where AJE.exe is located)
