Once hat, forever hat?

So, I'm very early into the game but... about character customization - once I customize my Finnish hero with a hat... there is no way to remove the hat? Or is that one of the customizations I have to unlock?

Can't figure out the Cabin character for the life of me.

I've unlocked everyone except for sauna guy and whoever you unlock on the cabin map, To be as spoiler free as possible I'll say it like this. I've followed the trail of notes and gotten to what I think is the final step but it just says "this one seems stuck" thrown land mines at it, read the note next to it and reloaded the map a bunch of times but I'm missing something and can't figure it out. Anyone got a hint?...
