You don't have to restart the game.
Thats nice but prevents others who have the same question from learning the answer.
Exactly as Vektor says:
1.You just have to start a game, save, quit game.
2.Then edit the game file with however much money you want. Browse to C:\Users\Username\Documents\My Games\FarmingSimulator2015. Note the several Save# folders. Select the one that has your save (look at timestamp). Use Notepad++ to open the careerSavgame.xml. Look for the line "money" and change the figure in the quotes. Save.
3.Restart game and have fun "testing"
I just keep my two large fields constantly churning out the money sticks and stash cash away to buy some funky forestry equipment. Problem is, as soon as I have a wedge, I can't resist buying a bigger harvester or trailer so I keep resetting myself. No biggie though as I'm still enjoying the plough, sow, grow, harvest, transport cycle I'm currently stuck in. Apart from the Chucks, it's all organic at Bewleys farm :)
