Sorry but it really doesn't. The harvesters all slide on fields and when your harvester slides away from your tipper it really gets annoying.
The sliding issue most people talk about is when machines that are parked start sliding slowly downhill, messing up unlolading and making the AI miss entire rows. That will hopefully get fixed one of these days. Machines being hard to control is probably not a bug, but it's hard to know exactly what you mean...
The sliding for me is when I'm plowing, sowing, etc. I'll be going straight and then the machine just starts to go off track (even if I'm cruising/not turning it myself) and I have to correct it.
Like ScareCrow already said it's normal don't worry. It's game simulating traction which plow/cultivator creates while going (cutting) thru soil. The weaker the tractor the bigger resistance equipment makes hence you get more "sliding". Hired workers are pros so they have bo problems keeping tractor in straight line :)

Is there anything I can do to improve my control? Weight up or down? Stick to a certain speed?
Also - for anyone who uses a controller, how do I use cruise control? It suggests LB+LStick but I can't find any combination where it holds my speed for me.
Wrong kind of sliding. The OP is talking about the way weaker tractors will slip and slide when pulling heavy equipment. Which is as it should be.
Trying to sow a steep field with the lighter equipment and your sower (or even the cultivator) will slide downhill causing you to miss a little bit of the row -- you then have the option of going over it again, and again, and again. The bigger / heavier tractors as well as the cultivators and sowers slide less than the cheaper / lighter ones .. they still slide but not as much.
There is a disadvantage for using the bigger equipment though, turning radius makes them skip chunks of your fields when they have to turn and make another run --- of course if you are the one steering then you can overcome this issue, it's only a problem when hiring help.
Sometimes though it is fun to take a tractor up to full speed and turn it suddenly to the side ... especially if you can get it to tip over. I've done this with the frontloader with the arm fully extended as well as the chipper. I can get the harvesters to do complete 360's.
