How do you start the engine and take the handbrake off

Press and hold down enter I believe. And as far as I know there is no hand brake.

"Vehicles by pressing - and hold for a moment - the Enter key to start. The engine remains on when leaving the vehicle. It can therefore be driven off after re-boarding immediately."

the controls are a bit odd at first and i recomend writing them down for reference.

start engine: hold enter
release hand brake: hold left Ctrl and press space
switch between forward/reverse (refered to as shuttle control): space bar
disable/enable shuttle control: hold space bar until the arrow in bottom right goes away

the following are more advanced and will give weaker tractors more grip:
4wd: hold left shift and press 4 (normal 4 not the one on numberpad)
front and rear dif lock : hold left shift and press 5 and 6 (cant remeber which does which. also not on number pad)
