Of course this doesn't help me right now, so I'm rather hoping someone clever here will be able to pull a Rabbit out of a hat for me. :)

As soon as the crops turn green (first stage green) they're ready to harvest, and won't yield more if you let them get darker green (that's just a scale showing when they're gonna wither)

For 2013, there was a "Field Status" mod, I hope that gets fixed and converted to 15 soon, dying to have that, so I don't have to open the information screen to check growth states :-)
Unless its grass your after, then you have to wait for it to reach the 'wither' stage, dark green
I recall quite a few people also having the same issue as you in telling apart the ground textures, at night in particular I found it could get tricky, and I had to take the significant fps drop to work with both front+rear lights on to make sure I wasn't missing huge spots.
The only possible solution would be seaching around to see if anyone has made a mod that changes the colours or ground textures, last I looked there wasn't, but that was quite some time ago as the game hasn't run since at least the very start of the year. If nothing else you can at least get around the issue with seeing ground textures by using an ai worker to do that job for you, they'll miss small bits but for the most part are actually quite usefull/intelligent.
perhaps this mod will work, from what i understand it'll make the textures after sowing, ploughing etc etc a little clearer to spot the difference.
