Potatoes produce the most tonnage per acre but the sell price is a bit low to take advantage of that.
Canola sells for the highest price (barring a great demand) per tonne but fields of this gives less tonnes per acre which equals out in the end. For example field 23 on Bjornholm gives 87 tonnes of wheat but only 55 tonnes of canola. The split holds whether you fertilize or not.
Forestry also seems to be a good money-maker, but it makes the most money if you sell larger logs than smaller, and less still if they're turned into wood chips first. On the Bjornholm map, logging makes the most if you load the logs directly onto the train car full of logs rather than dropping them in the yellow selling box or pushing them into the lake with the sawmill.
Regardless of what you sell, so long as you can deliver them to a destination with a train, make sure you do so. Hitting the nearby lever to "send the train away" will give you a bonus on whatever you're selling. This only works on the Bjornholm map, though.
Silage is a big money maker as well, but takes a bit of effort to get into. Corn seems to make little in the way of money, and is better used for making chaff.
Oh, and buying chickens to make money is a terrible idea. You have to collect the eggs and deliver them across the map by hand, and you don't make enough money to really make it worth your while.
This works on the Westbridge map too. Sell at a train station and then "send train" lever for your bonus. The more you sell before sending the train, the larger your bonus. I didn't know about the loading logs onto the train car yourself, i'll have to try it sometime soon.
I agree on the chickens, mostly because it is a pain to collect the eggs and then you have to cross half the map to sell them. There are mods that will collect the eggs for you but I haven't tried them.
I hadn't considered any kind of an automatic egg collecting mod, maybe I should look into them. I know I got a mod that stops the automatic sale of milk so that I can load up a tanker and bring it off somewhere to sell myself. Getting into animal husbandry is quite a ways away from where I am in the game, though.
