More than 1000 different orders can be given in the game. By combining each of them into a sequence.
Nothing prevents you from giving orders without crowding the infantry at the end of the path.
Naturally, orders should be given to the largest possible groups of soldiers. Otherwise, you will not have enough command level.
No, they will not maintain such a position, it is pointless and nonrealistic. The game tries to simulate the behavior of humans, not swarm of robots.
Maybe you should start with the tutorial missions? This would immediately remove many questions.

As you are a new player, you should become familiar with the Order/Command Wheel.
There are many options for you to move an entire platoon and keep them spread out when they arrive at their destination.
Use a single line formation, wide "social distancing" and make sure you are not using Covert Move or the squads will all seek the same cover, so of course they will bunch up together.
If you use no formation and/or covert move, all of the squads will consider the terrain to be the most important aspect of the order, and that makes total sense.
"Hey, sergeants, take your squads to point A, making sure you use the best cover to remain out of sight of enemy observation. But spread out so you don't actually use the "best" cover..."
That's the same as saying, "get to point A on this metro line but don't take the same train but arrive at the same time."
