how to fight pole plants

I had a spear in hand but I couldn't figure out how to angle it when I got grabbed by a pole plant

Well, I guess you just have to throw it at the plant?.. If you got grabbed then it will usually let you go, wherever you throw it - even though it happens to bug and to keep you stuck forever unless you manage to throw it another spear (at least it happened to me and I had no spear).

You can kill them without getting grabbed.

yeah maybe I'm just too spazzy, I forgot the plant was there and I managed to jump away while it was still holding me and I thought I could walk out but it started retracting and the way it coiled was weird so I guess I flubbed my spear throw

The reason plants and creatures behave differently every time you encounter them is because they were programmed that way. Developers wanted the player to feel like an animal in wild nature - you do not know how the world operates but you want to survive.
The most efficient way not to be grabbed by pole plant is ti avoid touching it completely, and always carry a spear with you, or at least a rock. The difference is: spear can get you freed after you were grabbed; but rock needs to be tossed beforehand in order to get you a couple of seconds and pass by while the plant experiences the shock.

The closer to the ground you hit it with a rock the longer it will squirm trying to find what hit it.
