You can buy Ferdinand, Hummel and Wespe in the Kursk scenario (and of course in Endsieg). To buy Marders you'll need the appropriate specialisation (Baukommando Becker), but for one reason or another it is not present in Panzerkrieg. Oh, joy.
Yes, thats what tanks are for - MINIMAL MOVEMENT. For quick breakthroughs and advance you use the slow heavy inf. or eng., right? What a pitty that Rommel and Guderian didn't have you around, who knows, they might have won the war!
It's a single player game so have whatever you want, just edit the unit files it only takes a minute,
remove the unreliable trait from the early tiger you're using and change the start dates for the other units you want or add the tech needed to unlock them
If it makes the game more enjoyable for you that's all that matters
The Tiger is a HEAVY tank. The purpose of units of Tigers was to facilitate the initial breakthrough of heavily fortified positions, or serve as a defensive hardpoint in vital areas. NOT to engage in sweeping maneuver warfare. There's a reason they were put into specialized heavy tank battalions and not into the main Panzer divisions and brigades.
(Also, LOL@"A Tiger could take on 10 t34 and win." Reality didn't exactly pan out like that particular bit of nazi propaganda.)
