I beat the final boss too many times to count with different graphics settings...
It's not a fix but a workaround.
You can skip the post-boss cutscenes and it should unblock you.
I kept crashing on the exact same loading screen (the one right after we see Erhard looking up towards the sky).
I watched what I missed on YouTube (which is like 5-10 seconds of nothing much lol) and I could keep playing right after the cutscenes.
Watched the credits with no issues and I could start playing post-game also.

That is indeed the exact cutscene that I'm crashing on.
Can you explain how to skip the cutscenes? I was pretty sure there isn't a way to skip the cutscenes in this game so that would be perfect as a workaround (and maybe make it faster to get to the fight itself?)

I’m playing on controller and the button that let me skip cutscenes is the one that is right above the D-Pad in this picture.
It’s the "one square overlapping another one" button. It’s the same button that lets you open the area map during exploration / open world.
I’ll try not to spoil for people reading the thread.
Not every cutscene is skippable during the final boss fight. If I recall correctly you can skip the initial dialogue before the fight starts, but you still have to play through the scenes before. You can fast forward using RB for the scenes that are not skippable.
I could skip the post-fight cutscenes as soon as I saw Yumia pick up the thing the boss dropped and it put me right into a conversation with Erhard after a loading screen (that wasn’t stuck).
Hope you can finally finish the game!
Looks like on keyboard it's the space bar to skip a cutscene when possible, thank you so much.
