Need Help with Character Customization.

I have completed the story, and finally got around to checking out character customization, but I found that not all the parts of the characters I've unlocked were there. How do I unlock more customization pieces, I've been wanting to make a character with the hammer, and one that can dual wield? I also need to know how to change a characters classification to female, so they can use double jump, and have an appropriate voice.
