Game keeps save states and some configuration files in specific folder. Using Windows it's stored under:
C:\Users\[username]\AppData\LocalLow\Dodge Roll\Enter the Gungeon
, but I believe using the Mac, it will be somewhere else (just google), open SlotA.options, or SlotB.options in txt editor (whichever slot you're using in EtG). Under "preferredResolutionX": 1600, & "preferredResolutionY": 900, you can set your own res. (I'm using 1600x900). Save it, and change this file to *Read Only*, so the game can't modify it.

I think this should work, but of course if you want to start changing any other game settings, this file need to be changed to normal attributes.

I tried what you said, but for some reason the game modifies the SlotA.options file back to the previous resolution when I launch the game (even if I put it read only).

I just googled a little bit. It looks like your native resolution is 16:10, and what I noticed, EtG due to "pixel art" style is trying to run with "pixel perfect" 16:9 resolution, so image is scaled properly.

Revert the config file I mentioned before, to default (read/write), and try choosing resolution to one of your screen aspect ratio (16:10=1:1.6 like 2560×1600, 1920×1200 etc.) but try changing scaling options to Fast Scaling, Uniform or Pixel Perfect. To be honest, there's no point running EtG in your monitor native resolution, as you will see BIG performance hit, and game assets/graphics are rendered in MUCH lower resolution anyway (and then upscaled).

When game reverts back to 2880 x 1756, what scaling option it is using? Can you choose 2880x1620 with "pixel perfect" scaling? It's the closest res. to your native's one, but proper 16:9 ratio.

So it does work if I set the resolution to be 2560x1600 with Fast Scaling, but the main reason I want to change the resolution is because there is a bug on the mac version of the game where the boss intro "cutscene" won't play unless you are playing the game in a certain resolution (instead you just get a black screen for a few seconds). That is why I want to run the game specifically in 2880x1800 (which is the only one that seems to work). I appreciate the help.

Hmm, interesting. I have no clue then...

BTW, holding Shift button, when launching EtG in Steam, will open graphics & controls settings outside the game itself. Maybe forcing changes this way will work....
//This works in Windows Steam client, not sure about Mac.

It does open a graphics and controls setting, but even if I change the resolution to 2880x1800, it doesn't change anything in game. Thanks anyways for trying to help.
