You need to get special item, look at the wiki!

The only one way I know how is to unlock the Box active item to go into "stealth" mode at the vendors and just grab the items.

I got the box, activated it inside the shop, tried to get an item, and bought it. While in the box. So no, this topic isn't solved. I'd like more info on it too.

Smoke bombs, the Box, Charm Horn, Ring of Etherealness (forgot the actual name), Grappling Hook are the ones I know of.

It's possible to not get caught if you activate cloaking item outside the shop, quickly enter, steal item and leave the shop before it wears off.

You can also use the log decoy and the explosive decoy

just place them on the shop near the shopkeeper and steal away
even do when i tried to steal more after the boss he disappeared

Chaff grenades also do the trick.
Be carefull though, you can't steal from the shop too much or the shopkeeper will catch you and close the shop.

Not 100% sure on this but it seems that the limit is 2 times per shop, but not more than once per floor.

So if you try and steal two items on the same floor he'll catch you. And if you steal one per floor he will catch you when you try to steal for the third time.

It's kind of weird to be honest.
