Is there a list for end-game activities?

Finished the 4 main character's pasts, unlocked the paradox, unlocked all of the shortcuts, beat blobulord, old king and chopper agunim.

Besdies unlocking the rest of the gungeoneers or beating lich (which I don't want to) - what else can I do?

try beating the rsourceful rat next then, or even the advanced dragun

you can also finish the hunting quests

You could also try completing Daisuke (the D20 NPC)'s challenge. Sure, you can get his chaos bullets unlock through a mercy system by failing 30 times, but actually completing it is probably one of the hardest things I've ever done in the game. It also changes up Dragun a bit. I don't think it's quite Advanced Dragun levels of hard, but it's quite the challenge, especially after having the clear all the previous floors with challenges as well.

Fight the Resourceful Rat
Fight the Advanced Dragun
Rescue all the NPC's
Buy everything in The Breach
Unlock the other characters and kill their pasts
Do Boss Rush
Rainbow Runs
Turbo Mode
Blessed Runs
Daisuke's Challenge
Do all the hunting quests
Fill out the Ammonomicon by picking up every item and gun at least once (with a very select few exceptions)

Probably some stuff I missed, but that's a lot of the things you can do

You can upgrade gunderfury to level 60 permanently through your runs, feed the evil muncher 10 guns found almost exclusively in bullet hell. Look for the high dragunfire. (Good luck.) Do a full playthrough with the sorceress' blessing equipped which can be fun with having a randomly generated gun every 20 secounds.
Also I found it more entertaining going through and beating challenge mode after unlocking the gun slinger since every weapon will behave differently with all their synergies equipped. Unlocking him is kinda fun too since using the paradox randomly grants items and guns youve unlocked at the start of the run changing gameplay up.
And lastly you can go through and beat the gungeoneers pasts again with their alternate costumes equipped, which unlocks an alternate starting gun.
