on every floor are 2 chests 1 always contains a gun and the other one always an item.
if you kill a boss without having received a gun on the current floor you are guaranteed to get a gun after the fight
As far as I know, you can't toggle hitboxes, but I haven't noticed any big difference between the hitboxes and the sprites, maybe I just didn't realize because I'm always too focused on not dying. I don't think it'd really make a difference to be able to see them tho.
As Sadgrub said, you get a guaranteed gun if you kill the boss before geting another gun in the current floor. You can also buy them if you find anything interesting, but I think that's it.
Don't worry about dying too much. The more you play the less you'll die, the game can be hard for starters. I won on my first run, yeah, but I had already played the game and I had pretty good luck with my items.
As for hitboxes, they're pixel-perfect. Every bullet's hitbox is down to its pixels (which is why I assume pixel-perfect is the recommended way to play the game). After a few games though, you'll get better at knowing how to best avoid/dodgeroll shots.
Don't feel bad about not beating the game in 58 tries. I'm sure most people take longer. I know I did. 145 deaths before beating my first past. Also, make sure you know how to make the bullet that can kill the past. It's all well and good if you can get to the gun, but without the bullet, you're not going anywhere.
Number of guns doesn't matter so much as quality of guns. You can sometimes get amazing runs with like 3 guns, or absolutely abysmal ones with 10. Keep playing, and you'll eventually unlock more and more of them, especially more useful ones. Get familiar with the ones you do get, and try and find the best ways to use them.
Some tips I would give are:
-when fighting Blobulons, their smallest form can be killed by rolling into them
-don't do convict as your first. just don't. I would recommend Hunter or Marine if you aren't trying them already
-keep freeing any prisoners you find. they'll either give you quests that will help you unlock new guns or act as new merchants in the gungeon
-never leave an unopened chest on a floor. if you've beat the boss and there's still chests around that you can't/don't want to open, shoot them open. You might get junk, but you might also get some more useful stuff on occasion. Plus, you might even get a certain useful companion when getting junk.
-just keep trying. as long as you keep trying, you'll get better, either from learning things or from improving your skills. I came into gungeon with some level of transferable skills from 100% completing both Hotline Miami games, and even I still had things to learn about the game. so just keep playing and you'll eventually beat your first past.

So open those two chests after opening the higher tier chests?
