His two "spread" shots are fairly easy to avoid; dodge-roll parallel to their spread, as dodge-rolling toward the first might mean you get hit by the second.
When his fires his large "ball" shot, remember that it spreads from its point of impact, so you may have bullets coming at you from behind.
His "missile" attacks are your best chance to do major damage to him, since he stands in one place and his attacks have a huge telegraph to them. It's also a great opportunity to use some DoT attack on him (such as the Convict's Molotov).
Keep in mind that even in the rooms which don't have pillars or bookshelves to block his attacks, you can always flip a table.
His bullets are actually quite predictable! It's like a 3 way shot with one or two bullets appearing on the "lanes" sometimes. It's easier to avoid getting hit by them by always walking away from it while sidestepping. Btw the trick to this fight and for the gungeon in general is to not look at where you're aiming, but look at yourself while you shoot at the general direction of the enemy, as dodging is way more important than fighting.

At 39s you can see that I was wrong, it's not a 3 way shot but a "cone" with a line of bullets on the borders and a little bit of bullets in the middle.
Still, it's easy to dodge that while walking back due to "paths" being formed inside the cone.
Apparently the gif was cropped to 60s but at the end I'd show that if you are cornered, an easy way to avoid taking damage is to roll diagonally and circle the boss. It can only fire at 8 directions, much like a d-pad, so once you move into a 90º angle his aim just snaps so it's easier to dodge.
For some reason, I always run into the rockets he fires out of his mouth, that land a couple seconds later. I never see the target-marker-thing. Trigger Twins and Bullet King are 'easy' though.
