how to erase my savefile or just start the new game?

no idea, but why would anybody want to do that? nothing changes except the gun unlocks and the npcs. just keep playing runs with new chars and do other challenges if yo bored. if you're trying to repurpose the game or give it to another friend, maybe look in the gameplay options for a reset switch

There's probably a file located in the game files you can delete. Afterwards, I'd go to Steam and reverify the game cache.

Users\"USERNAME"\AppData\LocalLow\Dodge Roll\Enter the Gungeon

You have 3 savefiles to choose from in options so no need to delete anything

Reset save/profile in options.

Escape to go to the menu -> Options -> Gameplay -> either change save slot in use to another one (Save Slot: A to Save Slot: B) or click "Reset Save Slot Progress"
