If you run into one without a decent boss-killer weapon, you'll have more trouble than usual for sure.
Probably best strategy is to stay in one spot while weaving in and out of the three bursts of shots and when they all go towards you roll through in a direction and then back the way you came. Rinse and Repeat. Also there is no shame in hiding behind a wall :D
They have a good chunk of health. Use your strongest gun, and don't worry about ammo for it since drops are surprisingly common. For the Convict, wait until it ends a salvo, and while the spikes are still on the walls/not flying back at you, get close to it and shotgun it a few times, then dodge the backfire. Just repeat.
By the way, fire and poison weapons work very well because the effects last even after it's closed it's doors, and weapons that cause explosions could be very useful as well times explosion could delete enough projectiles to give you a bit of wiggle room.
I didn't actually know this -- this'd make the Convict's molotov a very effective way to deal with them, I believe.
