Even if it is possible, the chance of that must be astronomically low, as the game has a weighting system for the item pool that makes items you've not had in a while more likely to appear.
Not only did you get two S rank items, you got the one with the lowest possible chance of appearing. That's... something, alright.
I'm not really sure if they did specific formulas for the chance, but I'm thinking it's something like each time you get hit you have "2 rolls" in the "number randomizer".
If that's the case, you actually have a bigger chance since you "roll the dice" twice, and (Theory:) you have a chance to heal two times in just one hit.
I mean, I think this is not like in Risk of Rain where the item effects get stronger in each stack because in EtG it's not supposed to stack, so my bet is on what I said above.

If I am correct about the two stones triggering separately, I made some calculations to get the chances of healing (and healing twice per hit if that exists)
Through the use of MS Excel, I made a table that counts how often you can heal when getting hit. There are 10000 possible combinations if we have to get 2 numbers from 100 (in any order and can have two same numbers in a combo).
3360 (or 33.6%) of these combinations consist of 1 number succeeding the 20% chance (healing you once), while 441 (or 4.41%) of these consist of 2 numbers succeeding the 20% chance (healing you twice).
Well I was curious as well so I calculated for that. I can't say that that's how it works tho. I just really love doing the maths xD
