How do I open this style of lock?

If that's what I think it is, you need a Cell Key. Just keep playing, you should find one.

It takes a golden key. One is guaranteed to drop on the same floor as one of those doors and vice versa.

Hasn't dropped so far. I've explored every room except for the boss room. :/

Sure enough. Ammoconda was a pain in the ass, but it dropped the Cell Key.
