Let me say this, I'm far from a Ubi fanboy, they're the scum of the industry, but let's be real, this isn't their problem if you take forever to finish your games (no offence). Alongside of the exaggeration here that an AC game crops up every 6 months is also anothing one that needs to die. Outside of the Spin-off titles (Rogue and Liberation) which are developed seperately by different devs the pillar AC games are yearly and that's plenty of time to dedicate yourself to a game and finish it. The honest truth is that you should focus your time to finishing games before moving onto the next one (ironic coming from me, I know, but it's the truth that applies in this scenario).
Anyway, if you're honestly concerned about the quality of the later games, then you have a right to be. The yearly releases have INDEED imposed a quality strain on the series since AC3, but it's all a matter of perspective. Amongst fans, AC4 is considered the best despite it being a modern AC game, however, a year later, Unity turned out to be critically panned as the worst in the franchise for overpromising and failing to deliver.
There's no ACCURATE way to tell you that you'll enjoy the later games, but the general consensus is that the later games are not as good as the earlier ones as they've lacked the innovation of the earlier games and have also lost it's focus from the original story premise and have taken a "kitchen sink" approach.
Personally, I've enjoyed all AC games (exception of Unity as I haven't played it yet), so I'd still recommend them as great games despite the flaws in the later entries. Just watch out for AC3 and Unity, though. Fans hate them.
After finishing AC4 I immediately dove into the past games to see what I was missing. The timeline for AC3 takes place in the future after AC4 so I started with AC3 and found myself able to look through the games obvious faults due to how much fun I was having. After finishing AC3 I moved on to AC Brotherhood which I found to be a lot more enjoyable than AC2. I played through Unity for PS4 and while I found it to be the weakest in the series compared to AC4 and the Ezio trilogy, I would absolutely play Unity if you plan on playing Rogue at all since it's a sequel to Rogue (which I can't wait to play again because it's a reskinned AC4 with additional content).
My advice is this... These games are alot of fun if you allow yourself to have fun with what's been given to you. Don't listen to people tell you what's fun and what isn't. Only you can make that decision and it's definitely one you should make yourself.
