Perhaps Unity for a change of pace and then Rogue?

There are plenty of reasons.
a) Unity was a mess when it came out and, in good bandwagon internet fashion, many people never gave it a chance;
b) Unity is an extremely demanding game (much more so that Syndicate) that a lot of rigs can't run with the framerate players would like it to run at. It is also not the best PC port out there - but most people don't have a clue and just say "durr, badly optimized" if it doesn't run like other games do.
c) Unity has a love story at the center of the wider story and Arno is always thinking about his loved one. Many just decided to call it "boring" or an "Ezio-wannabee";
d) Unity still has bugs and design flaws (some will experience them more than others). I have experienced some frustrating ones but, usually, you just have to restart from the last checkpoint - that's it;
e) Combat was deemed the worst in the series by a lot of people - in no small part because you can't kill 40 guys in a row like in previous games. There are stupid things about it (as with any AC game), like enemies dodging bullets lol - but that is just one aspect;
f) It is, overall, a very slow game. Actions take much longer than they did in all other titles, there is quite a bit of input lag and the cover system is a mess: you will often find yourself pressing the button to hug an obastacle, repeatedly, and just praying Arno does what you want him to do. Syndicate corrected all of this.
But the lack of fast and clear controls is what makes Unity a poor stealth game (IMO);
g) You lost useful mechanics. Whistling, for an instance, is nowhere to be found which, in turn, means that taking out enemies from cover will require another kind of lure: the cherry bomb. Unfortunately, enemies will not always come to investigate it as you'd expect and it can lure more than one enemy. Again, couple that will the overall slow nature of the controls and the faster detection times in Unity and the most trivial things become unecessarily difficult.
This small list encompasses some of the reasons. I'm sure other people will have other complaints. Honestly, I love Unity - despite all its flaws.
Rogue has better gameplay, Isn't reptitive, bug filled, and doesn't have a mediocre story; just know that if you're in it for the lore, you're right to be playing Rogue first.
Talking about story, if I got Rouge, what other AC creed game I should have played prior to have the required knowledge to play and understand the story properly, as well as not get in any way majorly spoiled from the previous games? I've played AC1 and most of AC2(+expansions), I have AC3 on uplay from that promotion, does it tie with 3 or with 4?

Yes. In 3, you play as two characters: father (Haytham) and son (Connor) Kenway. You start off with Haytham and then there's a jump in time and you continue to play but as the son.
In Black Flag, you play as Edward Kenway (Haytham's father).
In Rogue, you play as an Assassin who joins the Templar Order in the time period that you don't see in AC3 (ie, after you've played with Haytham but before Connor).
