Not all damage types can be dodged. To have a successful dodge, it has to be damage that you can actually dodge. (If your opponent is attacking with poison or holy damage, you can't dodge that, even with a 75% dodge chance.)
Your opponent's attack speed or the number of dodgeable attacks they make in a battle will also affect how many successful dodges you can make. (If your opponent is slow and only attacks you five times, then you can make a maximum of five successful dodges.)
Also, there's a skill called Agility Shackles that reduces your opponent's chance to dodge. So your dodge chance may be lower than you think. I'd always buy Agility Shackles if I thought someone was focussing on Dodge.
Dodge is awesome in the right lobby, especially with Perfect Rebound.
The Panda Warrior's ultimate is magic damage, which is not dodgeable by default. If the Panda Warrior had focussed on Ultimate branch, they'd likely be doing a lot of magic damage.
The Panda Warrior's talent is 25% chance to heal whenever they take damage. If your Demon Shadow had high attack speed, you were probably causing the Panda Warrior to heal more often. That healing talent scales with hero level, so it can be useful for Panda Warrior to build several branches rather than just focus on getting one branch to 40. (It's not necessarily a weakness that the Panda Warrior didn't have a 4-star branch.)
It sounds like neither Dodge branch nor Panda Warrior suit you playstyle. Underestimate them at your peril, as both can be strong against high attack speed heroes. Perfect Rebound reflects your attacks back at you as magic damage, and Panda heals when you attack and then can reflect that healing back to you as physical damage using Medical Explosion.
