What i've noticed is that the AI on 'very easy' doesn't seem to build elite units or care much about the late game and such things. As long as you can survive long enough, you'll be fine.
It's just that the AI plays aggressive and gets serious relatively fast. It plays to win, and because it gets some advantages from it's nature of being an AI it can be really difficult to win against at least hard and insane, while normal is still beatable. Means, as long as you play at least as aggressive as the AI while making the least possible mistakes.
I think it would be enough to integrate a rush protection and/or more strategies for the AI, chosen by the players.
Personally, I haven't beaten the insane AI yet, but all others. It's just a matter of learning. Given however start you start with (a) a hero and (b) enough food to produce some units right from the start, I think that's already a rush protection. And if you think you really need it, you can build towers even at tier 1. I don't think the game needs any mechanical protections from certain strategies. Though, I haven't been "rushed" by the AI so far. But I wouldn't call it a "rush" to be attacked after 5 minutes into the game.
I would play more games and then see how you can handle the AI. To me, the AI feels alright so far. Might also have something to do with one's own playstyle. Spellforce 3 requires you to be aggresssive to a certain extent, i.e. you have to leave your main sector and claim other sectors as soon as possible.
