Government is cool. More useful if you are criminally minded because you can alter a lot of the laws. Get to vote on issues and act as an elector for lower offices.
Other dynasty AI seems to go from being super competent to kind of dumb, but they all function well enough it's fine and provides a nice challenge politically at least.
The production chains are satisfying if you want to go down that route as opposed to just buying the raw materials for your business. You usually need multiple buildings of different types to feed into end game buildings, but you can spec into multiple professions.
