not really, you will notice it when the game drops to 30-45fps and also after you get used to gaming at 100-144fps you will most likely start to see a difference between 100 and 60 also.
i can but i personally always try to be at 80-100+ because i am already spoiled with 80-100+ so going back to 60 feels like crap.

As far as whether to keep your monitor it depends on your budget and what you have. I have a 27" asus 1080p 144 hz monitor (without gsync). I'm going to upgrade to a 27" 1440p with gsync OR wait for the 35 inch widescreen with gsync from acer.
I would not spend the money upgrading to another 27 inch monitor with the same resolution just because it has gsync...if that makes any sense.

Its an great display. Freesync just adds even more out of it. everythink is smooth.
