Changing Production

I may be missing something completely obvious but are you stuck with the production choices on a city or can you change them at a later point. I have resources I cannot exploit and desperately need to change production in a city with no slots left and cannot see how to change the production from one product to another. I have only been able to reduce the amount of businesses to zero and not removing the business completely.

You are definitely not stuck with whatever production you picked.

But you need to demolish every single building of a particular good to be able to change it. (Which is done on the same menu as adding more of them)

After that is done, click the big gear button in the city to get to the goods selection menu - unselect the one you want to get rid of, and pick the new one.

Click on the production as if you'd add new units to it. Instead of summing more units, subtract them. Build button will turn into demolish. Get the production amount to 0, then you'll be able to change it for another resource.

Each land has a few raw materials to choose from, you can't choose any raw material.

For manufactures, the land is irrelevant, yuu can produce anything anywhere. But you need its raw materials close to make sure it doesn't halt.
