will there be more ways to obtain event currency, can we buy out the whole shop or do I need to keep redoing the story mode for more event currency?

Yea you need to keep redoing story stage, if you have cleared the boss stage then it is the best stamina to currency ratio, just keep doing that. That why before the event begin they give you 10 days login event for extra stamina potion lol. Don't worry farming event stage and exchange for shop item is more stamina efficient.

what about the "midnight mayhem" or "san francisco kids" will we get more event currency from there or should i just be putting all my stamina into the event story from now on?

No they are separate events, you should just put all your stamina into the current event story and try to complete the event missions ( Disco Calendar) until you clear all the shop items with purchase limit. Then you can go back to grinding other thing. There are still 22 days left so no rush lol.

so i just do the same stage over and over again for the next two weeks, no wonder this game isnt successful what a bad system.
the last event i could do whatever i want while getting event currency at the same time.

as a new player i want to continue on with the story, (idc about breesy mode) but i now feel forced to be locked into this one stage for two weeks ...

If you just want to continue with the story, then you're free to do so.

Why would you feel "forced" if you're aware it's not required to obtain all the rewards from the shop? If you're feeling that much FOMO, then I'd suggest using all your candies/ stam regen and spamming the stage while tossing the game on second monitor or windowed and AFK it until the shop is empty.

Best way is to farm endboss stage.
You get most currency per energy. And if you saved your energy candy, yes you can buy everything from the shop. I already bought it all except islands

Man im stuck now because i cant do hard mode or other difficulty because i have really small rooster of characters and ledger keeps destroying me

Don't worry, in the future they will make the event available again ( in the Reflection tab), you can get all the drop from the stages. Just focus on clearing the event shop because it is not coming back. And the boss stage of this event is super super easy once you understand the mechanic, you can clear it with 3-4 stars team, i recommend you to check this video here:
