Free flight option?
Is there an option to just be able to pick a plane and take it for a ride without any enemies?

Yes. Go to Quick Missions, choose a map, and then select the icon of a single airplane on that map. Use the pull-down menu to select nationality, aircraft type, fuel load, modifications, etc. At the map you can also choose an altitude to start at including ready on the runway, or parked with engine(s) off. And you can choose weather and time of day.
