The straight forward answer ; you will have to learn to map the controls yourself.
There is no default mapping because most of the planes have different functionality around engine controls, oil and water radiators etc.
Simply start by mapping the basics to the stick, roll,(left/right) pitch (up/down) and yaw (rudder left/right).
Then map the engine throttle to the throttle etc.... etc.
Fire guns to trigger, rockets/bombs to thumb as well as reload and aim focus. As you become more familiar witth functionallity, you can then consider mapping functions to other buttons on your HOTAS.
It might seem daunting at first but you willl slowly get the hang of it.
It is important to learn to map controls as you may need to remap controls frequently if you are moving between planes.
This is a sim, its complex, mapping controls is pretty simple, there are other far more complex elements to the game. You need to clear this simple hurdle before you can start to reaally learn the game and ultimatelly enjoy it.
