Its also a balancing act.
You need enough wind going over your rudder to make it work, so too little wont work.
Also "dancing" on your rudder helps, ie quick presses on either to keep yo straight.
Practice, practice, practice.
So dont feel disheartened.
But note that a new flight model is coming for all planes which may make all aspects of flight a little easier and more realistic.

Watch out if you increase the throttle some planes start to move around 28% throttle. That means for you -> you increase the throttle very slowly and watch at what moment the plane start to move. If the plane starts to move reduce the throttle little bit. If the plane stops repeat this everytime until you reach the runway where you are ready to take off.
BTW if the Rudder not affect try to increase the Deadzone.
