Tips about each aircraft can be found on the specification tab on the map just before you start a mission, just scroll down to give you an idea about the quirks, engine power settings, the most important one's are bullet pointed at the bottom.
Make sure you have the technical tips selected in settings as well, the game will tell you things like when you're going fast enough to take off, required speed for decending and touch down etc. It does this when it detects you're trying to do one of these things so give it a chance to catch on ;)
The difficulty settings are quite scalable so don't be afraid to play it on an easy setting to get the feel of the game and then work you're way up to taking off the training wheels.

Bf109 is a good plane to start. Later you can switch to allies planes which demand engine managment.
Or you can start on normal diffficultivity.
Also finding somenone to fly with can help a lot and make learning process much faster.
