I can't really help since I haven't bothered with any campaigns. I only play career mode or a PWCG career.
But you're right, the campaigns are sets of scripted missions so will have some kind of theme, definite events, and a specific aim. The career missions are all randomly generated so you could get anything, including missions where you fly around and find no enemy at all. (ie, like real life.)
So it's about what kind of gameplay you want really... structured with definite action involved, or less structured but a more "realistic" depiction of the day to day life of a pilot.
You can also get free scripted campaign on their website from the community.
Sounds nice,i bought Battle for Moscow, it's the only thing i own besides the main game.
The only scripted campaign i found on steam was the "blazing steppe" but it doesn't really looks that interesting to me.
Battle of Moscow is an entire different game.
All "Battle of..." are main games on their own. You dont need Stalingrad to get them, unless you buy it on Steam ; Battle of Stalingrad, Moscow, Kuban, Bodenplatte and Normandy (coming soon).
Then you have the campaign, which are all the "Scripted Campaign".
Each 'alternate expansion', like battle of Moscow, usually has a main campaign and a scripted campaign, although it's important to read the description to see. For instance I believe Battle of Kuban includes the Sea Dragon scripted campaign.

That was before the AI got a serious revamped as fighting against the AI was dull ( they only went in circle, always). So with Sea Dragon, you didnt bother fighting aircraft, instead, you were the prey while hunting down gound troops, ships and artillery. All of this while the Germans were on their big retreat.
Anyway the AI is now very good and I bought all scripted campaigns I had the planes for, for 10$ ( I think it was 4 in total) which is a very good deal.
Scripted campaign are much better because they are, you guessed it, scripted. So there's never a dull moment unless its the first mission or if you dont like flying a long time before getting to battle.
That's also a pretty solid deal for that content, I'm hoping to get Bodenplatte/Normandy soon when they become more finished and get some decent sales on.
