I use to fly for minutes to find anyone and then get shot down in a second. Sometimes some maneuvering where I get som shots in but it doesn't seem to hurt at all. Seems like I can't damage anything and my plane is turned to paper when I enter a MP server.
One round I had some opponents on the same level and had a good time, got some victories and was killed some too. All other rounds (20 something?) I have never killed one single plane. There should definitely be some sort of ladder system so new players could be let in in the genre without being totally owned. Skill gap seems so huge I have no other option but only play single player. Nice to have time compression but it feels a bit lame to only meet AI.

Personally for me when I'm flying german - it's The BF-109 F4, the BF-109 G2, or the FW-190 A3.. I will fly the A5 from time to time but it just handles a bit differently than my beloved a3.
You'd do alright turn fighting in a BF-109 E7, but bare in mind you have to manage radiators as they aren't automatic. It's slow and doesn't climb as wel as the g2/f4 but it can make some crazy hard turns that would send either of the other two into the start of an accellerated stall. It also doesn't have a ton of ammo.
You want to keep the altitude/energy advantage.
It will spoil you - but learn in the g2/f4 or the fw-190 a3 when available. The bf-109 f4 is the best climber in the game. You will almost always be able to escape from any of the russian fighters at an equal or less energy state than yourself if you go into a shallow climb, eventually into a 300-350 km/h climb, by the time they're 1-2km behind and underneath you, if they're still trying to get a gun solution they will stall out, and you can pull up into a vertical stall, chop the throttle and be able to point your nose directly at the flying beneath you and either kill them or end up behind them. Be careful of crazy prop hanging yaks with flaps out, but they can still be outclimbed to a point where they aren't a threat.
Don't take gunpods as it will ruin your climbrate. You might be able to score kills more often because of the added firepower, but you will more likely find more situations where you are able to live and fly home after running out of ammo or fuel if you can climb to safety.
Flying the fw-190 is a completely different style of bnz. It's mostly boom.. and the zoom can be lacking if you're not coming in from a much higher altitude and your enemy already at a much lower energy state.
Strength of the FW-190 is it's outright speed and the ability to maintain control authority while hitting dive speeds of 830+ km/h. Also 2 20mm cannons without taking any mods. On the deck you can easily push the fw-190 A3 upwards of 630+ km/h with emergency power and keeping just enough room for the most shallow of dives, making sure to go back to 85% throttle to avoid blowing your engine up and maintain 600+ kph
The biggest mistake I see from german fighters is being down on the deck in a turn fight, and I'm guilty of it too because it's hard to resist fixating on a target in a virtual plane where you aren't really dead if you die. But even proper BnZ can leave you vulnerable if your opponent has any teammates or wingmen near by, so check six, save emergency throttle for the points you really have to run away (split-s will save your life) and put as much distance between you and someone on your six. You have to study their engergy state, and observe them getting father away from you or at equal energy before pulling up to climb in the bf-109 although if they're far enough back and only slightly gaining on you and slightly above you, you might be able to pop max throttle and already be climbing well on your way before they can catch up, and they should be unable to keep up with your climb as you hit 300km/h and adjust your stabilizer to hold the climb.
In the FW-190, just dive until you're at a high speed, if they're already close on your 6 split s as your roll rate is amazing, They can't change directions like you can, follow it up immediately with another if you still need room and then make it a shallow dive in a straight line to retain as much of that speed as possible at about 1km so when your pursuer finally does start running out of extra energy from the dive you still have room to go into a shallow dive to maintain 650-700 km/h. Look behind you and the experienced pilots will generally break off and go back the other way acknowledging that they can't keep up, and other more immediate threats may need attention rather than chase you towards your friendly airfield.
You CAN be successful in turn fights in the the 109 and 190, but the fact is - it will leave you extremely vulnerable should any other russians join in the fray.. and I will even admit I've at times successfully escaped those situations with some luck involved but also knowing I've just lost the advantage and it's time to run. Personally im thankful to be using a msffb2 that helps me feel stalls coming on, and adjusting the stabilizer is happening a lot during any given fight.
Once you either have the advantage, or they've stopped chasing you - you can then decide whether or not you want to reset, gain altitude and go back for another kill, assuming you wrecked someone on your initual dive.
If they're so close on your six that there's no chance to run, try to surprise them with scissors..
but most importantly.. find a buddy that you can call out to while you're running.. chances are he'd love the opportunity to shoot someone fixated on your shiny tail.
Another truth - even the best, most situationally aware and tactically knowledgable pilot needs luck on his/her side.
P.S. My wordiness doesn't make me a self pro-claimed expert or anything.. it's just been my experience in IL-2 since I started playing, which steam will not reflect my hours played as I have the non-steam version. I don't have the experience in 1946 that you claim to, but this game feels completely different than 1946 to me in regards to flight model. The graphics are different as well.. I couldn't spot anything for my first couple months but over time it's gotten easier.. and my tactics tend to change depending on what plane I'm flying.
so your best bet is to either pull some erratic stuff, pull the stick as hard as you can, kick the rudder let your plane enter a aero stall and roll over and down. let them pass you and try and get a quick shot. Dont worry about ammo just spray as much as you can when given the chance. a single rnd can kill it or try and run away.
people who play russian planes dont play outside their comfort zone try and use that.

Energy loss is the worst advise someone can give you, as long you have energy advantage you are on winning side.
109's have better hight alt engine performance and climb rate, use that and fight vertical with deflection shots.
Avoid engaging enemy with higher alt, extend and climb above him.
Once you are higher than enemy, dive in controled speed (not too fast but fast enought so you can climb again and extend so he can't follow you)and try to shot him down, if he saw you he will go into turn, here is the part where you need to learn deflection shooting.
If you miss/overshot than climb again and fight vertical, avoid turn fight!
If he is on your six, learn barrel roll and scissors which can bring you on his six.
Remember dive in controled speed so you can follow him in turn while keeping speed and energy advantage.
Also you can join some teams, lonewolf hunting is hard.
