First, I did a lot of car races to practice what I call the 'bootlegger' turn - where you turn to the side just as you slam on the brakes (Not 's' on the keypad, but the hard brake - default is SPACE) - you end up pulling one of those wild skids like on every driving action movie, and with each car you learn just how to time when to release the brake and hit the gas again to power through tight turns quickly.
I say get used to that first, because for bikes it's different. Before you even race, master it on the car then try it on the bike. The emergency brake doesn't give you a full skid-stop the way a car does, but it does slow you down dramatically more than just the back key. The turns are wider than you can get in a car, but you can still do some pretty tight maneuvering with some work. Practice again to learn how it's different from a car and then do a few more turns like that in freeroam to really learn how to nail a tight turn.
Then, buy the 1100 NA-R if you don't have it already and go to town.
The race is about half luck with regards to how smart and lucky the other drivers are, but if you can master that brake-turn on a bike you maximize your chances. The time I won I was about three carlengths ahead just after turning from Central onto the mountain road, and then they must have all crapped the bed because I was down the other side of the mountain before the next-nearest guy was at Victoria Peak. (He closed fast, and those tight turns right near the end of the race nearly lost it for me, but I beat him, finally.)
after a while the game honestly just gave the race to me to win, i crashed a few times and they were still 100m away it felt. So the game does whenever it feels like it like the rubber band technique lazy developers use can turn off
the big advice
the first 50-60% of the race just keep going, even if you think you screwed up royally reverse and recover, its a 5 minute race and you will get back to first
the game stuggles with sharp turns. Hold the standard brake and the sharp turn button,so left trigger and B on an Xbox controller or logitech F310. its sort of a drift you treat it as but for whatever reason you dont lose as much speed
bikes to use
the somersault cloud one some people did , not the best acceleration , but great handling
GX300 - the ultimate crotch rocket one is how i got it
do not use any other bike, the 1100 CCs super expensive i forget the name of the bike because the bike are awful bike for instance is is too fast, you'll never get those last turns
screw this race i hope the people who designed it got fired as i got just about every other race my first attempt, i wish you could upgrade engines and all to at least give you an edge
