Tips for 100% before I start the game
I want to start this game and also 100% it.

You guys have any tips on what to do or NOT to do, while doing the main story, to make my life easier while trying to 100% the game ?

This might be a little spoiler so I will try to explain it as simple as it can be. You get exp for 2 "groups" in this game. Outfits will help you get more exp points. RED group is harder to get if you won't wear outfit with bonus exp for that "group". BLUE group is easier to get maxed out ( you will see why when you play ). After finishing the game you will be stuck with few skills that you can't unlock becouse you only get exp by doing missions. So pick your outfits smart.

I hope you understand what I told you :)

Edit: there is no new game plus and some of the collectibles you may collect after some story progression

So if I just play the game for the story, I might not be able to 100% it? Do I have to re-start a new story, or can I just load Chapters, or Saves?

You can collect things after you are done with story but RED group exp is harder to get without bonus exp outfits. You only get that exp for the groups by doing missions and you can't play them again later. So yes you need to watch out for that.

I don't remember how the saves work so play like you have to do everything in one run.

Also some quest might seem like you can do them infinite amount of times but they are not infinite ( around 20 - 30 boring ones from one person that gives you quest I think).

My idea is to play for like 2h and see what you need to do for 100%.

As Kubax said, the (red) triad bonuses are the most difficult to increase, so concentrate on buying clothing and accessories that gives them a boost. The blue police meter is pretty easy to max out.

Do the side missions first when you can, you get some good bumps from the girlfriend missions in particular. Also other side missions like retrieving the green idols unlock more moves in the martial arts studio.

Each story mission gives you a rating that adds to the blue and red meters, if you really screw one up you might consider reloading a save and playing through the mission again to get a bigger bump.

I'm not sure, but without DLC's u can't do 100% achievements. I try to do 100% achievements and i got some achievements from dlc's even when i don't buy them. Maybe its a bug, idk u can tell me when u end game iff u got full achievements or not

It does. You start them from main menu.
