Generally, I've found dealing damage to the arm itself (if you got a sword, climb the chains even, my tesla crank has once or twice managed to free a person even) - you need to attempt to target the arm and deal it damage, that has always released those being attacked.
If you have a wrench/other low damage item or perhaps just melee, it is probably more hopeless. if the only guy with a gun is grabbed and he ends up dead - hes probably the best to revive just because he can release you from the arm and destroy the grabbing arm the soonest.
I heard (as stated above) the head takes additional damage, and may be a good melee target if you cant hit the arm easily compared to just hitting its legs, never seen anyone released from leg/body strikes ever.
NOT FUN

It is possible to damage the arm to cause it to drop someone. About 15-20 revolver shots will do it, but the bots NEVER attempt this unless the enemy is perfectly positioned for them to use the chains.
NOT FUN.
Also in the not fun category is the bots intentionally taking extra time to kill the swallower fish when it grabs you. They suddenly become stupid and that is the worst thing an AI can do.
