If you sell them, you get more money to put back into the shop, for more money.
I personally sell any that are worth a lot of money ($100+), I don't care much for having my own collection. I'd sell every card if the workbench could package cards worth over $1, alas...
I'm already regretting it. LOL.
I did not interpret their road map plan of a playable tcg, as an actual game we play against other real people, but being able to play a little simple game against bots while your employees run the store.... I doubt there would be actual monetary value behind these cards
If you are a Steam Achievement chaser, you will likely keep them.
Are you tight on money and finding it difficult to progress, might want to sell a few for a small head start.
Myself personally, anything under $1000 before making price adjustments gets sold (except for ghost and ghost foil cards, as they have a very low drop rate and to date I've seen nothing over $1000 on them).
